Tomato Pie

1 Pie Crust 

3-4 tomatoes (you will make 2 layers)

Basil 

1/2 cup of green onions 

1 clove minced garlic 

1 cup of GRATED mozzarella cheese (I did not grate mine in the picture but it makes a big difference) 

1 cup grated cheddar cheese

3/4 cup of mayonnaise (a little goes a long way)

Salt and pepper to taste 

1. Bake pie crust at 350 for 10-15 min

2. Lay paper towels on a paper plate. Slice tomatoes, and lay on paper towels - salt and let sit for 30 min. Then put the plate in the microwave for 1 min to get rid of the juice. This is Grandma Bee's secret to keep the pies from getting soggy! 

3. Mix together shredded cheeses, onion, garlic, salt, pepper, and mayo until it sticks together. 

4. Lay 1/2 the tomatoes in the bottom of the pie crust, top with cheese mixture then with the basil. Repeat this step to make 2 layers. 

5. Bake at 350 for 30 min uncovered until the top gets lightly brown.
